I want to share with you a delicious treat that's easy to make and a favorite of so many. It's the always loved chocolate truffle. This one, however, has a special twist; it has an Oreo center and it's covered in a hard chocolate shell. Yummy! I served them as one of my Christmas desserts this year and they were a big hit so I want to share them with you. Here's the recipe. I hope you enjoy:
Ingredients:
1 Package of Oreo cookies (not double stuff)- I suggest the reduced-fat Oreos to save on calories
1 bar of cream cheese (I suggest using 1/3 less fat Neufchatel Cream Cheese, again saves calories)
One 12 oz bag of Semi-Sweet or Dark Chocolate Morsels
Mix one package of Oreo cookies in your food processor (Cuisinart)until fine.
Next, cut one bar of cream cheese into 4 pieces and add to cookie crumbs in Cuisinart. Mix until well blended.
Next, line tray with wax paper. Form cookie/cream cheese mixture into small balls (whatever size you want them to be)and place them on the wax paper-lined tray.
When done forming the balls, place them into the refrigerator to chill while you melt the chocolate morsels. Melt 1/2 a bag at a time. I like to melt the morsels in a small saucepan on low heat on the stove. Stir chips quite often while melting them. You can also melt them in the microwave.
Next, remove tray of oreo balls from fridge. Roll oreo ball in warm melted chocolate using two forks to help move it around until it is covered with melted chocolate. Lift out of pot and let excess chocolate drip off. Then place back on wax paper on tray. You dip in sprinkles onto the top of the truffle for a colorful look. Once all balls are coated, place truffles back into the refrigerator so that the outer chocolate coating can hardened. Once hardened, you can remove them from the tray and place in your holiday tin or onto a serving plate. Let them chill about an hour before serving. Store them in the refrigerator and bring them out when you serve them.
